Snack time

Okay, I am going to blow my own trumpet a little bit. I am in love with the sandwich I made yesterday. There's no back story here, except that I felt the need to keep a note of this recipe :)

This is the perfect snack to fight those terrible evening hunger pangs. Big enough, and very filling, without any unhealthy fats - no butter or cheese, 

Beat those hunger pangs with this filling mushroom and egg sandwich

What you need

2 bread slices, toasted
1 egg, boiled
4 button mushrooms, sliced 
1/2 tomato, chopped 
1/2 tsp tahini, or other nut butter
2 tbsp milk 
1 tsp olive oil 
1 pinch, garlic powder
Salt, to taste 

How to

While the egg is being boiled, slice the mushroom and chop the tomato.

In a pan, add the oil and mushroom. Sprinkle some salt and let the mushroom gently sweat. Then add the garlic powder.

Add the tomato and give it a stir. Then add the tahini and milk. 

Cook on low heat for 2-3 minutes until the mushrooms are cooked through. Turn of heat.

To assemble the sandwich, spread the mushroom mixture on the toast. Top with a roughly chopped boiled egg, and cover with the second slice of toast.
